Radiant aromas of honey and beeswax, evolving towards cocoa, subtly toasted and roasted, expressions of the long ageing on laths of the bottles before disgorgement (8 years), with patient autolysis of the prise de mousse yeasts.
The nose is then revealed with a sensual and iodized breath, with scents of apple, pear, candied citrus fruits, walnut, exotic fruits and white flowers, signatures of the Chardonnay harvested by hand in 2005.
Pure opening obtained by the advanced settling of the grape juices after pressing, reinforced by the adjusted dosage with 6 g/L of sugar added at disgorgement, and enhanced by a vibrant minerality and by delicious woody notes.
The mouth becomes warm, soft and enveloping, definitely thanks to the judicious fulfillment of the malolactic fermentation of the base wines, but especially thanks to the regular bâtonnages realised for the 9 months of ageing on lees in 225L barrels.
Tasty finish, punctuated by spices.
Very good length on the palate.
With this Excellence Cuvée – Brut Grand Cru Blanc de Blancs, Jean-Bernard Moroy, producer and cellar master of the Champagne House Louis Massing, offers us a remarkable interpretation of the Grand Cru of Avize.
To taste during meals among friends, with a medallion of veal fillet and prawn, for example.
Wine growers since 1922, the Champagne House Louis Massing is established in Avize since 1936. A vineyard of 12 hectares, mainly planted in the Grands Crus of the Côte des Blancs (Avize and Le Mesnil-sur-Oger), cultivated in the greatest respect of the environment, completed by a rigorously selected supply, gives birth each year to around 300,000 bottles of a range of 8 quality Champagnes.
