The Chardonnay, exclusive varietal, takes us with its perfumes of apple, pear, lemon, grapefruit, almond and hazelnut, enhanced by the joyful iodized breath, definitely obtained by the vinification and the ageing of the base wines in oak barrels during seven months on yeasts lees.
Later, the nose reveals improbable touches of exotic fruits.
Pure opening, with a delicious tension, obtained by the selection of the first juices (cuvée) during the soft pressing of the grapes, the timely stop of the malolactic fermentation of the base wines and the adjusted dosage with only 4 g/L of sugar added at disgorgement.
The mouth becomes caress, expression of the emerging maturity of the Champagne, leading to a tasty finish, punctuated by delicate spices.
Remarkable length on the palate.
With this reserved Cuvée Blanc de Blancs «Le Mont des Tours» (4260 bottles), Hervé Savès was able to blend wines from 2011 (90%) and from 2010 (10%), to offer us an unforgettable reading of the strong character of the Bouzy terroir, south-facing Grand Cru of the Mountain of Reims
To taste during festive meals, with snails in a puff pastry and Bleu de Langres, for example.
Wine grower in Bouzy, the Champagne House Camille Savès carries on its pursuit of excellence since 1984. An accurate oenology, in the service of a vineyard of 10 hectares of old vines planted in the Grands Crus (Bouzy, Ambonnay and Tours-sur-Marne) completed by the Premier Cru of Tauxières, cultivated in a real desire to reduce the environmental footprint (without herbicide nor insecticide and with ploughing of the soils), allows to produce around 85,000 bottles of exceptional Champagnes per year, of which 80% are exported and 50% are shipped to the major export.
