Original and careful presentation, adorned with Egyptian
symbols, mischievous homonymic nod to Aÿ, Pharaoh, to better promote the
culture of Champagne.
Aspect:
Golden
and brilliant.
Fine
bubbles.
Delicate
bead of foam, persistent.
Nose:
Sensual,
it slowly unveils its heady complexity.
Generous
aromas of honey and caramel, gourmet expressions of the maturity of the cuvée obtained by 4 years of ageing on
laths of the bottles, with patient autolysis of the prise de mousse yeasts.
The
nose then comes to life with delicious perfumes of red and black fruits
(blackcurrant, raspberry and blackberry), coupled with subtle spices (white
pepper, cinnamon and liquorice), inimitable signatures of the selection of the
best Pinot Noirs of the Aÿ Grand Cru.
Palate:
Pure
attack due to the selection of the first juices (cuvée), during the pressing of the grapes.
The
mouth becomes caress, sensual and warm, perhaps thanks to the judicious
fulfillment of the malolactic fermentation of the base wines and to the
adjusted dosage, with 9 g/L of sugar added at disgorgement.
Dense
and mineral finish.
Remarkable
length on the palate.
With this Cuvée
Blanc de Noirs Aÿ Grand Cru bottled in 2012 (3000 bottles), Etienne Goutorbe,
its producer, proposes us a touching composition, variant with bubbles of the
Pinot Noir already produced as red wine.
To
taste as an aperitif or during a meal, with oysters gratinés with Champagne
zabaglione, for example.

House Henri Goutorbe perpetuates the family tradition in Aÿ, historic Grand Cru
located in the heart of the Champagne area. Under the leadership of René
Goutorbe, key figure, assisted by his wife and his two children, Etienne and
Bertrand, the House cultivates with care its vineyard of 22 hectares planted
with the best vines of the three champenois
varietal, from its own production, and produces with talent around 180,000
bottles of highly expressive Champagnes each year, of which half is exported.
