Aspect:
Golden and brilliant.
Fine and dynamic bubbles.
Reserved bead of foam.
Nose:
Sensual and endless aromatic harmony.
Joyful fragrances of candied red and black
fruits and kirsch, driven by a mentholated breath and supported by delicate
touches of spices, captivating signatures of the black varietals (90% of
Meunier and 10% of Pinot Noir).
Later, the nose becomes generous with heady
scents of caramel, cocoa and roasted coffee, thanks to 6 years of patient
ageing on laths of the bottles, before riddling and disgorgement.
Palate:
Beautiful vitality at the opening, definitely
obtained by the absence of dosage (no sugar added at disgorgement).
The mouth becomes caressing, deep and warm,
reinforced by the judicious fulfilment of the malolactic fermentation of the
base wines.
Deliciously acidulous finish, punctuated by
soft spices and highlighted by a delicate effervescence.
Great length on the palate.
For this radiant cuvée L’Authentique Brut Nature,
Dominique Sendron, its producer, was able to blend with talent wines from 2011
(50%) and reserve wines from 2010 and 2009 (50%), to reveal the bright
personality of the terroir of Le
Breuil, exclusive origin of the grapes.
To taste from aperitif to
meal, with a Peking duck fillet, soy honey and balsamic vinegar, for example.
Driven by the passion of
vineyard and wine work, true to the values handed down by the generations who
have succeeded one another since the beginning of the XIXth century, Dominique
Sendron continues her endless quest for excellence since 1996. She cultivates
with care her 3.60 hectares vineyard, planted with Meunier (85%), Pinot Noir
(10%) and Chardonnay (5%), in the slopes facing south of Le Breuil, in the
Surmelin Valley, to produce with accuracy, each year, around 14,000 bottles of
touching champagnes, marketed under the brand created in 1964 by her parents.
