Sober and harmonious bottle.
Aspect:
Solar.
Very fine bubbles.
Silky tears.
Nose:
Heady aromatic intensity, reinforced by the
long period between disgorgement and shipment (minimum 4 months).
The jammy red and black fruits elegantly
mingle with subtle spices (pepper, cinnamon and liquorice), joyful signatures
of the black grapes carefully selected in 2011, of which 60% of Meunier from a
very low yield 70-year-old plot and 40% of Pinot Noir chosen in a 40-year-old
plot.
The captivating maturity then takes us,
result of 5 years of patient ageing on laths of the bottles before
disgorgement, with generous fragrances of pastries and then of cocoa.
Palate:
Radiant purity at the opening, enabled by the
rigorous selection of the first juices (cuvée)
during the pressing of the grapes and by the stop of the malolactic
fermentation of the base wines.
The chalky minerality, bright, gives way to a
sensual generosity, supported by the judicious dosage with 12 g/L of grape
sugar added at disgorgement.
Warm finish.
Endless length on the palate.
With this Blanc de Noirs 2011,
Florian Gondé was able to read with talent the Premier Cru terroir of Taissy to offer us a touching champagne, with a very
good value for money.
Even though it is suitable for an aperitif,
it will reveal itself during meals, with a stuffed free-range hen, for example.
Florian Gondé, young passionate wine grower, has been
perpetuating with talent, since 2013, the champenois
traditions. Driven by a real desire to reduce the environmental footprint, he
cultivates his 4 hectares vineyard certified Haute Valeur Environnementale
level 3, mainly established in Taissy, Premier Cru of the Mountain of Reims. A
gentle and creative œnology, with vinification in small volumes, in vats or in
barrels, gives birth each year to around 10,000 bottles of authentic
champagnes, marketed under the brand created in 1976.
