Aspect:
Beautiful deep colour, driven by delicate
coperry touches.
Refined effervescence.
Regular and persistent bead of bubbles.
Nose:
The aromas of radiant red and black fruits
take us into an exciting whirl, highlighted by delicate touches of spices
(pepper, cinnamon and liquorice), heady signatures of the Pinot Noir of which
20% are crushed by feet and 80% are put into vats (whole grapes) for a
semi-carbonic maceration.
Later, the emerging maturity of the champagne
is unveiled with warm scents of coffee and cocoa, thanks to two years of ageing
on laths of the bottles, before riddling and disgorgement on the spot.
Palate:
Lively and deep opening, definitely the
expression of the grapes harvested by hand, at perfect ripeness, in 2015, and
then vinified without chaptalization.
The mouth becomes caressing, silky and
creamy, thanks to the judicious fulfilment of the malolactic fermentation of
the base wines and to the generous dosage, with 10 g/L of cane sugar added at
disgorgement.
Sensual finish, deliciously acidulous,
underlined by a lively sparkle.
Great length on the palate.
Once again, Benoît Tassin demonstrates his
talent of wine grower determining the ideal moment for racking, with tasting,
after over three days of perfectly controlled maceration, to offer us this
balanced Brut Rosé, source of intense pleasure.
Ideal as an aperitif or during a meal, with a
red fruits gratin, for example.
While
his son Clément finishes his technical degree in viticulture-œnology in the
Lycée Viticole de la Champagne and while his daughters Cyrielle and Auriane progressively
become involved in the wine estate and old bottles museum (certified Vignobles
et Découvertes) activities, Benoît Tassin, heir to 7 generations of wine
growers, cultivates his 4.75 hectares vineyard composed of 14 plots established
in Essoyes and Celles-sur-Ource, to produce each year with accuracy around
16,000 bottles of joyful champagnes.
