Golden and brilliant.

Nose:
Intense and radiant aromatic harmony.
Endless farandole of aromas of candied red
and black fruits (raspberry, strawberry, redcurrant and blackberry),
outstanding signatures of the Pinot Noir, underlined by delicate touches of
spices, definitely the characteristic sign of the vinification and then of the
ageing of the base wines for 9 months, with bâtonnages,
in 205 litres oak barrels (3 to 4 years old).
Later, the maturity of the cuvée is unveiled, captivating, with its
gentle roasted scents, thanks to 4 years of ageing on laths of the bottles
before riddling and disgorgement.
Palate:
Lively and dense opening, obtained by the
rigorous selection of the first juices (cuvée),
purer, during the pressing of the grapes, reinforced by the timely stop of the
malolactic fermentation of the base wines and by the low dosage, with only 3
g/L of sugar added at disgorgement.
Later, the roundness is revealed, ample and
warm, highlighted by the bright minerality.
Finish with a remarkable vitality, punctuated
by spices.
Great length on the palate.
With this Blanc de Noirs Grand Cru Aÿ - Extra
Brut, last creation of the house, Philippe Delescot, cellar master, signs an
original and unforgettable interpretation of the Grand Cru terroir of Aÿ, exclusive origin of the grapes.
Ideal as an aperitif, or during a meal with a duck
roasted with spices and mango, for example.
Established in Aÿ, historic capital of the
Champagne area, the Champagne house Edouard Brun et Cie has been perpetuating
the family traditions of excellence since 1898. The grapes carefully harvested
by hand in the 9.5 hectares vineyard of the house, mainly planted in the
Premiers and Grands Crus of the Mountain of Reims, vinified by Crus, in casks,
barrels or vats, by the two brothers Philippe and Emmanuel Delescot, enable
each year the production of around 200,000 bottles of inspired champagnes.
