Ruinart is the oldest Champagne House, founded in Reims in 1729 by Nicolas Ruinart who fulfilled the intuition of his uncle, Dom Thierry Ruinart, a visionary Benedictine monk. Clearly positioned at the upper end of the range, the House has understood how to establish the Ruinart taste, fabulous variations around the Chardonnay that is clearly dominant in the Champagnes of this brand, mainly from the Côte des Blancs and Mountains of Reims.

Appearance :

·        Bright gold

·        Green glints

·        Festive effervescence, consisting of a perlage of rare finesse

·        Subtle and persistent bead

Nose :

·        Initially timid, gradually revealing, with modesty, a unique aromatic universe, of touching sensuality

·        Spring-like, a delicious and unexpected surprise for a Champagne of this age, with notes of white flowers, then of apple, pear, citrus fruits and fully ripe peaches, with slight hints of melon, pineapple and apricot, distinctive characters of Chardonnay, the sole varietal of this Cuvée, obtained from the noble Grand Cru terroir of the Côte des Blancs (Avize, Chouilly, Cramant and Mesnil-sur-Oger), but also in the Mountains of Reims (Sillery, Puisieulx, Mailly and Verzenay), north facing

·        The nose then reveals impressive maturity, with notes of honey and beeswax, fresh butter and brioche, deliciously toasted, strengthened by hints of cinnamon, the result of patient yeast autolysis of the prise de mousse during the lengthy ageing sur lattes of the bottles (9 years), before disgorgement, in subterranean chalk cathedrals of the ancient crayères (chalk quarries or pits) of Reims

Palate :

·        Remarkable purity and insolent vitality, intense and bright, but ever gracious and elegant, enhanced by a decidedly low dosage, with 6.5g/L of sugar added at disgorgement, expressing dense minerality through the taste

·        Revealing the citrus fruits, candied apple and pear, but also the delicate spices already perceived at the nose, strengthened by a sublime, silky effervescence

·        Delicious and velvety finish thanks to a meticulous malolactic fermentation during vinification of the base wines

·        Endless length on the palate

Drink alone as an aperitif, to brighten those special moments, or during a gourmet meal with Sea bass with two gingers and redcurrants or scampi in olive oil.
