Mythical Champagne

A family-run House since 1818, the Champagne House of Billecart-Salmon produces 1.8 million bottles of prestige Champagne per year, sold in over 60 countries. The arrival of Denis Blée as the Vineyard and Winery Manager in 1995 marked the return of the use of wood, made real in 2010 with the construction of new barrel cellars.

Appearance :

·       Intense gold, with green glints

·       Fine and abundant perlage

·       Subtle and persistent bead

·       Bright

Nose :

·       Captivating and alluring, a source of intense pleasure

·       Remarkable complexity, thanks to the alcoholic fermentation at low temperature of the base wines (13°C) 

·       Initially of honey, beeswax and spiced bread, together with a hint of butter, roasted coffee and pepper, an expression of lengthy ageing sur lattes of the bottles before disgorgement, with autolysis of the prise de mousse yeasts

·       Nuances of red fruits, an expression of the 60% ripe Pinot Noir grapes from the Grand Cru sites in the Mountains of Reims

·       Then, the nose reveals seductive aromas of citrus fruit, apple and pear compote, peach, almond and hazelnut, but also apricot and raisin, signature of the 40% Chardonnay obtained from the Grand Cru terroir of the Côte des Blancs (Chouilly, Avize, Cramant and Mesnil-sur-Oger)

Palate :

·       Smooth, dense attack

·       Unexpected balance of pure minerality, intense and almost structured enhanced by a perfectly mastered malolactic fermentation and dosage adjusted at disgorgement, and an ample and creamy roundness, the result of vinification and ageing in barrels (12 years) with bâtonnage, of 25% of the base wines  

·       Gentle effervescence

·       Revealing the apple, pear and citrus fruit already perceived at the nose

·       Fabulous length on the palate

With this Cuvée Nicolas François Billecart 2000, created in 1964 in homage to the founder of the House, François Domi, Chef de Cave of the Champagne House of Billecart-Salmon, signs sumptuous Champagne, rich and generous, a particularly well interpreted vintage of 2000.

Drink at 10°C, during a festive meal, with cooked poultry such as Duck a l’orange.
