Champagne Chapuy – Carte Noire Cuvée Tradition Brut

The Champagne House of Chapuy is a family-run estate extending over 8 hectares of vineyard 5 of which are planted with Chardonnay, in the great terroir of the Côte des Blancs, and 3 hectares of Pinot Noir and Pinot Meunier on the hills just south of Epernay.


A traditional look, in an understated and elegantly presented bottle.

 

Appearance :

 

·        White gold

·        Limpid and bright

·        Fine, abundant perlage

·        Elegant and persistent ring of bubbles (cordon de mousse)

Nose :

 

·        Generous and complex, immediately delivering wonderful sensations

·        The first nose opens with a dominant rich note, toasted, combined with aromas of toast, chocolate, almond and hazelnut, an expression of the maturity of this cuvée, obtained with lengthy ageing sur lattes of the bottles (2 years)

·        The nose then reveals an interesting aromatic and complex spectrum consisting of citrus fruits and green apple, signs of the prevalence of the Chardonnay (55%), candied red fruits, honey and a hint of spices, a characteristic sign of the 20% Pinot Noir and 25% Pinot Meunier

Palate :

 

·     The attack is fresh and mineral-like, quickly balanced by a full and rich smoothness, the result of accurate malolactic fermentation and precise dosage (8g/L of sugar) after disgorgement

·     A delicious liveliness together with a harmonious effervescence throughout the taste, characteristics obtained by following a rather lengthy period (6 months) between disgorgement and the dosage

·        The finish reveals the fresh citrus fruits and spices already perceived at the nose

·        Great length on the palate

With this excellent value for money Carte Noire Cuvée Tradition Brut, Aurore Chapuy, Chef de Cave of the Champagne House of Chapuy, signs Champagne with great expression delivering a beautiful image of 2008, from which 90% was obtained and from the terroir of Monthelon and Barbonne.

Drink as an aperitif, throughout a meal or even with dessert, with an Apple Charlotte. Perfect with fish, such as Sole a la meunière and asparagus from Provence.
