Mythical champagne

Sober and bright bottle. Label decorated with an engraving of Aÿ in the XVIIth century, cradle of the Philipponnat family.

Aspect:

Bright colour, reflection of the inspired blending.

Delicate effervescence.

Scattered bubbles, in corolla.

Nose:

Sumptuous.

The delicate scents of apple, peach and apricot of the Chardonnay gently interlace the radiant aromas of jammy red and black fruits of the majority of Pinot Noir.

Later, the maturity of the cuvée is revealed with gentle notes of pastries, joyful characteristic sign of 9 years of ageing on laths of the bottles.

Palate:

Vertiginous purity obtained by the stop of the malolactic fermentation of the base wines and by the adjusted dosage with only 4.5 g/L of sugar added at disgorgement.

The mouth becomes generous and caressing, punctuated by subtle spices thanks to the vinification in wood of a part of the base wines.

Impressive length on the palate.

For this Cuvée 1522 Rosé - Millésime 2007 extra brut, Thierry Garnier, cellar master of the Champagne house Philipponnat, summons with talent the noble terroirs: Mareuil-sur-Aÿ and Le Clos des Goisses for the Pinot Noir of the red and rosé de saignée wines, Aÿ and the plot « Léon », historic of the house, for 70% of the white wines of Pinot Noir and Le Mesnil-sur-Oger for 30% of the white wines of Chardonnay.

To taste during meals among friends, with a deer fillet and its acidulous blueberries purée, for example.

Founded in 1522, the Champagne house Philipponnat has passed down for nearly five centuries the champenois values and expertise, from generation to generation. A 17 hectares vineyard implanted in exceptional terroirs, cultivated in a continuing effort to reduce the environmental footprint (Haute Valeur Environnementale certification), and an accurate and inspired œnology with vinification and ageing of a part of the base wines in oak barrels, give birth to a range of touching champagnes in the cellars of the castle of the XVIIth century of Mareuil-sur-Aÿ.
