Solera


Solera: blending and ageing process traditionally used for Sherry (Spain). The vintages are stored in a series of vats whose content is decanted and mixed from the youngest to the oldest, according to the withdrawals for bottling. This method of élevage is called dynamic, compared to the static élevage in barrels. It is a system of continuous blending, which contains a fraction of each vintage, from the wines of the last harvest to the wine of the year of implementation of the solera. The producer can choose to age his reserve wines inspiring from the solera principle, to provide complexity to the obtained champagne.
