Minerality: All aromas and flavours related to
the soil. The chalk of the champenois soils,
particularly present, gives the Champagne wine its particular minerality,
delicate and gentle. The wine grower,
choosing its grapes in its plots where the soil is not very thick and where
roots are in direct contact with chalk, chooses to favour the expression of
this minerality.
