Champagne Claude Cazals - La Chapelle du Clos 2012

Sober and luxurious bottle, decorated with the cross, emblem of the house.

Aspect:

Golden and brilliant, coupled with emerald glints.

Very fine bubbles.

Fine bead of foam.

Nose:

Heady aromatic farandole, source of rare emotions.

The Chardonnay opens up with discretion, subtle, between fragrances of candied citrus fruits and scents of exotic fruits, underlined by an iodized and life-giving breath.

Later, the nose becomes sensual, punctuated by soft touches of honey and roasted coffee, characteristic signs of the fullness of the cuvée obtained by 5 years of ageing of the bottles in the cellars of the house.

Palate:

Dense and pure opening, reinforced by the adjusted dosage with 5 g/L of sugar added at disgorgement, enhanced by the tasty minerality of the chalk.

The tension gives way to a voluptuous generosity, supported by the judicious fulfilment of the malolactic fermentation of the base wines.

Balanced finish, deliciously acidulous.

Exceptional length on the palate.

For this cuvée La Chapelle du Clos 2012, Delphine Cazals, its creator, was able to accompany with sensitivity the Chardonnay grapes harvested by hand, nice ripe thanks to the particularly favourable position of Le Clos Cazals in the Grand Cru of Oger, in an old plot of vines (50 years old) planted next to the chapel, to sign a masterful champagne. 

To taste as an aperitif or during a meal, with a roast half-squab and seasonal vegetables, for example.

While the Champagne house Cazals has just celerated its 120th anniversary in 2017, Delphine Cazals, true to the values passed down by her grandfather, Ernest, cooper and founder of the house and by her father Claude, visionary wine grower, inventor of the mechanical riddling of the bottles, has been perpetuating the family traditions since 1996. She produces with passion exceptional champagnes, outstanding variations around the Chardonnay and the noble terroirs of her 9 hectares vineyard in the Côte des Blancs, of which Le Clos Cazals of 3.70 hectares in Oger.
