Ageing potential of champagne


Ageing potential of champagne: champagne is one of the greatest wines for ageing (vins de garde). Certain champagnes can age and improve for 20 years and more, on condition that they are aged on laths, to settle the inactive yeasts (bottle fermentation yeasts), before disgorgement. Therefore, the producer decides the ageing duration of the champagne. The producer will decide to disgorge and then sell his champagne when he believes it has reached optimum maturity.
