Domaine Collet Champagne – Cuvée Héritage

The domain Collet, managed by three brothers of the same name, settled in Fontaine-Denis, grows its 5-hectare vineyard planted with 60% of Chardonnay, 35% Pinot Noir and 5% Pinot Meunier, to develop and market approximately 45,000 bottles of quality Champagne every year. 

 

Original and modern presentation.

 

Visual Aspect: 

 

·        Golden.

·        Fine, sophisticated bubbles.

·        Discreet and persistent bead of bubbles.

 

Nose:

 

·        Complex, it displays an infinite aromatic melody, thanks to the blend inspired by 40 base wines.

·        Crystallized red fruits and delicate spices, signatures of the Pinot Noir (21%) and the Pinot Meunier (12%), punctuated with a subtle woodiness, result of the vinification and élevage of the base wines in 300-litre oak barrels, made by Jérôme Viard (cooperage in the Champagne-Ardenne).

·        Aromas of honey and caramel, expressions of the rising maturity of the cuvée, thanks to 4 years of ageing on laths of the bottles before disgorgement.

·        The Chardonnay (67%), picked in the vineyard of Coutinaux, finally shows itself, with scents of apple and pears compote, of citrus, slightly mentholated.

 

Palate:

 

·        Pure first taste, thanks to the selection of the first juices during the pressing of grapes, and in the sensible blocking of the malolactic fermentation of 86% of the base wines.

·        The Palate then becomes smooth, thanks to the generous dosage, with 10 g/L of sugar added at disgorgement.

·        Mineral finish, pleasantly bitter, supported by a hint of pepper.

·        Great length.

 

Thomas Collet, the cellar master of the domain Collet, set all his enological talent in the service of this Cuvée Héritage (1,536 bottles), emotional tribute to Anthime Collet, René Collet’s great-uncl, the last cooper of the village, and moving interpretation of the terroir of Fontaine-Denis and the vintage 2008, exclusive year of harvest of the grapes. 

 

Ideal to accompany your meal shared with friends, with a rack of lamb, for example.
