Champagne Vilmart et Cie – Cœur de Cuvée 2006

Settled in Rilly-la-Montagne since 5 generations (1890), the Champagne Vilmart et Cie is certified Ampelos (sustainable viticulture) and high environmental value. The house grows its 11-hectare vineyard located on the Premier Cru of Rilly-la-Montagne, planted with 60% of Chardonnay and 40% of Pinot Noir, and crafts approximately 110,000 bottles of highly expressive Champagnes every year.

 

Sober and sophisticated presentation.

 

Visual Aspect: 

 

·        Golden, bright.

·        Fine bubbles.

·        Discreet bead of bubbles.

 

Nose:

 

·        Blooming, source of intense pleasure.

·        Delightful aromas of apple and pear compote, of apricot and raisins, accompanied by subtle nuances of almond, hazelnut and mint, signatures of the Chardonnay (80%).

·        Mesmerizing maturity, with scents of Viennese pastries, chocolate and roasted coffee, result of 6 years of ageing on laths of the bottles before disgorgement.

·        Delicate scents of blackcurrant, raspberry and cherries in brandy, thanks to the 20% of Pinot Noir.

 

Palate:

 

·       Dense first taste, supported by a pure tension, allowed by the rigorous selection of the Coeur de cuvee during the soft pressing of the grapes, harvested at perfect maturity, and by the sensible blocking of the malolactic fermentation of the base wines.

·       The palate then becomes fleshy, warm and caressing, backed by a discreet woodiness, result of the vinification and 10-months élevage of the base wines in 1 to 3-year-old 228-litre oak barrels.

·       Savoury finish, pleasantly iodized and spicy.

·       Remarkable length.

 

With this Cœur de Cuvée 2006, Laurent Champs, cellar master of the Champagne Vilmart et Cie, managed to practice a soft and inspired enology (transfer by gravity, without pumping), to sublimate the chalky terroir of Rilly-la-Montagne (Les Blanche Voies, exclusive origin of the grapes) aged 55 years old, with limited yields, facing south.
