Champagne Bonnaire – Cuvée Variance

Wine grower in Cramant in the Côte des Blancs since 1932, the Champagne Bonnaire grows carefully its 22-hectare vineyard, mainly planted with Chardonnay. The house develops and markets approximately 200,000 bottles of quality Champagnes every year, of which 50% are exported.

 

Sober, original and very successful presentation.

 

Visual Aspect: 

 

·        Deep golden colour.

·        Fine bubbles, well-distributed in the flute.

·        Sophisticated and persistent bead of bubbles.

 

Nose:

 

·        Harmonious, it gradually blooms until the plenitude

·        At first marked by the Chardonnay, the exclusive grape variety of the cuvée, harvested in 2005, with aromas of candied lemon and grapefruit, apple and pear compote, apricot and raisins, accompanied by a touch of fresh butter.

·        Accomplished maturity, obtained by 7 years of ageing on laths of the bottles before disgorgement, with scents of honey and beeswax, evolving towards cocoa.

·        Sophisticated woodiness, with delicate nuances of vanilla, slightly roasted, result of the vinification of the base wines in old oak barrels.

 

Palate:

 

·        Pure first taste, supported by a tension which accompanies us throughout the tasting, certainly enabled by the rigorous selection of the first juices, during the soft pressing of the grapes.

·        Rare minerality, marked by the terroirs of origin of the grapes: Cramant Grand Cru (50%) and the Premier Crus of Cuis (25%) and of Bergères-les-Vertus (25%).

·        The palate becomes fleshy and captivating, thanks to the realization of the malolactic fermentation of the base wines and to the adjusted dosage, with 7 g/L of sugar added at disgorgement.

·        Charmingly tangy finish.

·        Great big length.

 

With this Cuvée Variance created in 1995, Jean-Louis Bonnaire and his son Jean-Etienne, the makers, sign an accomplished Champagne, that gives a beautiful image of their talent of winemakers.

 

To enjoy for the aperitif, or during festive meals, with a wild hake, for example.
