Settled in Aÿ since 1829, the Champagne Bollinger perpetuates the art of perfection dear to Lily Bollinger. A vineyard of 164 hectares composed by 85% of Grand and First Crus, combined to an elaboration without concession with ageing of reserve wines in corked magnums under 1.5 bars of pressure and partial maturing in oak barrels, gives birth every year to 2.5 million bottles of exceptional Champagnes, with a majority of Pinot Noir.

Visual aspect:

 

·        Bright and amber.

·        Fine bubbles.

·        Refined bead of bubbles.

 

Nose:

 

·        Blooming and infinite.

·        Complete maturity, result of 8 years of ageing on laths of the bottles with cork before manual riddling and disgorgement, with caramel aromas, evolving towards roasted coffee.

·        Fragrances of apple and pear compote, apricot and raisins, signatures of the Chardonnay (34%), selected in the First and Grand Crus of the Côte des Blancs (Chouilly, Cramant, le Mesnil-sur-Oger, Oger, Avize, Vertus and Cuis).

·        Notes of red fruits, slightly spicy, marks of the Pinot Noir (66%) chosen in the Montagne de Reims (mainly Verzenay and Aÿ).

Palate:

·        Fresh first taste, dense and mineral.

·        The palate reveals a controlled powerfulness, warm and coating, revealed by the vinification (alcoholic and malolactic fermentations) and the 7-month maturing in old oak barrels, by batches of pressing, before the blending inspired by 16 crus (88% Grand Crus and 12 % First Crus).

·        Incomparable length on the palate.

With this cuvée La Grande Année 2004, Gilles Descotes, cellar master of the Champagne Bollinger, signs an unforgettable interpretation of the year , in the pure Bollinger style.

To enjoy between 10 and 12°C, during a gastronomic meals, with a preserved shoulder of lamb, for example.
