Champagne Pierre Leboeuf – Brut Grand Cru

Wine grower in Ay for 5 generations, the Champagne Pierre Leboeuf cutivates carefully its 4.7 hectare, composed of 80% Pinot Noir and 20% chardonnay, set up in the grand cru of Ay and in the premiers crus of Avenay-Val-d'Or and Mutigny. 25 000 bottles of quality Champagne are elaborated and marketed each year, in the respect of the traditions of the Champagne region.

Sober and neat presentation.

Visual aspect :

 

·       Golden, luminous.

·       Fine bubbles.

·       Fine and persistent bead.

Nose :

 

·       Ample and generous.

·       Delicate aromas of citrus fruits (lemon and grapefruit), peach and almond, subtly mentholated, signatures of the chardonnay selected in old vines in the locality of Chaufour, on the grand cru of Ay.

·       The Pinot Noir, also chosen in old vines of Ay (locality of La Croix), reveals itself with exquisite nuances of red fruits (blackcurrant, raspberry, strawberry and cherry), ever so slightly spiced.

·       Soft scents of caramel and honey, expressions of the rising maturity of the Champagne, obtained after 2 years of ageing on laths before disgorgement.

Palate :

 

·       Lively and neat attack, thanks to the selection of the first juices (cuvee), during the soft pressing of the grapes, carried by the minerality.

·       The mouth then becomes dense and warm, results of the realisation of the malolactic fermentation of the base wines, underlined by a silky effervescence.

·       Delicately spiced (pepper and liquorice), accompanied with a delicious bitterness.

·       Great length in the mouth.

With this Brut Grand Cru, producer Vincent Leboeuf, knew how to implement a soft oenology ( without filtering and fining the base wines with fish protein for a greater finesse), to offer us an inspired interpretation of the 2010 vintage, exclusive harvest year of the grapes.

To enjoy during the aperitif or during a meal, to accompany a rack of lamb from the Pyrenees with foie gras and seasonal vegetables, for example.
