Champagne Michel Gawron – Brut Tradition

Guide VERON des Champagnes 2015

(approximately 15 euros)

Wine grower in Pouillon since 1760, the Champagne Michel Gawron cultivates carefully its 2 hectare vineyard settled in the heart of Massif de Saint-Thierry, made up of three grape varieties from Champagne region (60% of Pinot Meunier, 25% of Chardonnay and 15% of Pinot Noir), in the greatest respect for the environment, to elaborate and to market 7500 bottles of Champagne of character per year.

Sober and traditional presentation.

Visual aspect :

·       Golden.

·       Fine and festive bubbles.

·       Persistent bead

Nose :

·       Blossoming, it seduces thanks to its generosity

·       Delightful aromas of crystallised red fruits (raspberry, strawberry and cherry), expressions of the black grape varieties (87.5% of Pinot Meunier and 12.5% of Pinot Noir).

·       Nuances of citrus fruits, apple, peach and liquorice, elevated by notes of honey and caramel, results of the inspired coupling of the soils ( calcareous sands, silt and clay) and rootstocks.

Palate :

·       Precise and deep first taste, allowed by a rigorous selection of the best musts during the  pressing of the grapes (mainly cuvee, with only 5% of the best of the taille juice), heightened by a light dosage with only 6.5g/L of added sugar at disgorgement.

·       The mouth then becomes warm thanks to the malolactic fermentation of the base wines, blessed with a remarkable presence, carried by a smooth effervescence.

·       We find here the honey mentioned in the nose.

·       Dense, delightfully slightly acidic and balanced finish.

·       Great length in the mouth.

With this Brut Tradition, producer Michel Gawron knew how to implement a soft and precise enology (protection of the grapes and musts by carbon dioxide to limit oxidation and sulphur dioxide treatment), and create the ideal blend (12.5% of reserve wines) to offer us a moving Champagne Blanc de Noirs, with a good value for money.

To enjoy during the aperitif, or during a meal with friends, to accompany a young pigeon in a walnut crust, for example.
