Wine grower in Louvois for several generations, the champagne Guy de Chassey takes great care in revealing the noble regions on which its vineyard is situated (two thirds on the grands crus of Louvois and Bouzy, and a third on the premier cru of Tauxieres-Mutry). The pinot noir (75%) and the chardonnay (25%), cultivated in respect of the environment, and a scrupulous oenology allow to elaborate and market 60 000 lasks of quality champagnes each year.
Traditional, sobre and luxurious presentation.
Visual
aspect :
- Golden, intense.
- Refined effervescence, with very fine bubbles.
- Discreet and persistent bead after service.
Nose :
- Generous and blooming.
- Delightful maturity, result of a long ageing
process on laths before disgorgement (8 years), with a patient autolysis
of the yeasts of the prise de mousse, with warm aromas of honey, evolving
towards cocoa and roasted coffee.
- Scents of red fruits (redcurrant, strawberry,
raspberry and blackcurrant), carred by the delicate spices (liquorice and
cinnamon), signatures of the pinot noir (50%).
- Scents of citrus fruits, apple, pear, raisins, almond and hazelnut, thanks to the chardonnay (50%).
Palate :
- Pure attack, blessed with a great vitality,
allowed by the rigorous selection of the first juices (cuvee) during the
soft pressing of the grapes and by the judicious blockage of the
malolactic fermentation on the base wines, accompanied by a striking
minerality, stamp of the grands crus.
- The mouth becomes ample and deep, voluptuous, and
ends on deliciously slightly acid finish, ever so lightly peppery.
- Remarkable length in the mouth.
With this Millesime 2004 Grand Cru, its producer Ingrid Oudart, sins a champagne of character, of good value for money, moving interpretation of the great year 2004.
To enjoy during a meal with friends, with a carpaccio of marinated trout from Vercors, for example.
