Champagne Bourdaire-Gallois – Blanc de Blancs

Wine grower in Pouillon, in the small Reims mountain, the champagne Bourdaire-Gallois cultivates its 4.86 hectare vineyard composed of old vines (44 years old in average), planted with 85% of pinot meunier, 10% of chardonnay and 5% of pinot noir), in respect of the environment ( cover planting and work of the soils). 17 000 bottles of quality champagne are elaborated with passion and marketed every year since 2002.

Sober and original presentation, in a luminous white glass flask.

Visual aspect :

 

  • Pale gold, bright.
  • Very fine bubbles.
  • Refined and persistent bead.

Nose :

 

  • Shy at first, it blossoms quickly.
  • Aromas of really ripe citrus fruits, apple, pear, peach, apricot and white flowers, deliciously mentholated, signatures of the chardonnay, exclusive grape variety of the vintage.
  • The subtle wooden scent, ever so slightly roasted and spiced, result of the vinification of 50% of the base wines in 20 hL Alsatian wine tanker before drawing into stainless steel vats, blends itself harmoniously to the delightful scents of honey and caramel, expressions of the maturity of the champagne thanks to 4 years of ageing on laths before disgorgement.

Palate :

 

  • Lively and precise attack, thanks to the rigorous selection of the first juices (cuvee) during the soft pressing of the grapes.
  • The palate then reveals a beautiful tension, that accompany us all through the tasting, carried by the delicious minerality of the silica, iodised, footprint of the soils of the massif of Saint-Thierry (66% from Pouillon and 34% from Chenay and Trigny).
  • We find again the spices mentioned in the nose, accompanied by a soft effervescence.
  • Great length in the mouth.

With this Blanc de Blancs, producer David Bourdaire, knew how to marry with talent the base wines of 2009 (80%) and of 2008 (20%) to offer us a blanc de blancs champagne of asserted character.

To enjoy from the aperitif to the meal, with a salmon tartar and crayfish tails, for example.
