Champagne Binon-Coquard – Brut Millésime 2002

Wine grower in Spoy, in the cote des Bar since 1669, the champagne Binon-Coquard, certified Terra Vitis, relies on its 6.5 hectare vineyard, cultivated in the greatest respect for the environment, composed of the 3 grape varieties from the Champagne region (70% of pinot noir, 20% of pinot meunier and 10% of chardonnay) and divided between the soils of Spoy, Meurville and Champignol-lez-Mondeville, to elaborate and market 25 000 bottles of champagne of character each year.

Sober and luminous presentation.

Visual aspect :

 

  • Dense gold and sun-like.
  • Very fine bubbles.
  • Elegant and persistent bead.

Nose :

 

  • Blossoming, with a remarkable complexity.
  • Delightful maturity, with scents of honey, caramel and croissants, evolving towards cocoa and roasted coffee, results of 10 years of ageing on laths, at 12ºC.
  • Delicate nuances of apple and pear compote, hazelnut, almond, walnut, apricot and raisins, signatures of the 20% of chardonnay.
  • The pinot meunier (60%) and the pinot noir (20%) reveal themselves, with scents of plum, raspberry and blackcurrant, assorted with hints of brandied cherry and spices (pepper,liquorice and cinnamon).

Palate :

 

  • Ample and generous, real delicacy, carried by the minerality and the tension that accompany us all through the tasting.
  • Rare density, allowed by the limited returns of the grape harvest, thanks to the grass cover of the plots.
  • Fresh finish, delicious surprise for a champagne of this age, thanks to the selection of the first juices (cuvee), purest, during the soft pressing of the grapes.
  • Exceptional length in the mouth.

With this Brut Millesime 2002, cellar master at Champagne Binon-Coquard, Maxime Binon, gives us an inspired interpretation of the soil of the cote des Bar, happy marriage between elegance, carnal voluptuousness and vitality.

To enjoy from the aperitif to the meal, to accompany a red mullet with a squid-ink crust, for example.
