Champagne Boizel - Grand Vintage 2007

Sober and luxurious presentation.

Aspect:

Dense gold, bright.

Refined bubbles.

Reserved bead of foam, persistent after service.

Nose:

Harmonious and radiant.

Well-defined maturity, obtained by 7 years of ageing on laths of the bottles before disgorgement, with some gentle hints of honey and pastries, slowly evolving towards touching scents of cocoa and roasted coffee, highlighted by a delicately spicy breath, perhaps the result of the vinification and the ageing of 3% of the base wines in old oak barrels.

The nose then reveals a heady complexity, between aromas of red and black fruits, expressions of the black varietals (50% of Pinot Noir and 10% of Meunier), softly mingled with perfumes of citrus fruits, apple and pear, signatures of the Chardonnay (40%).

Palate:

Pure opening, enhanced by the vibrant minerality and leading to a tasty tension.

Then the mouth runs through an enveloping warmth definitely reinforced by the fulfillment of the malolactic fermentation of the base wines, supported by the sensual and creamy effervescence.

Interminable finish, deliciously acidulous, punctuated by spices.

Very good length on the palate.

With this Grand Vintage 2007, Christophe Roques-Boizel, cellar master of the House Boizel, was able to select with care the grapes from the best terroirs, to compose this remarkable interpretation of the year 2007, in the pure Boizel style.

To taste during meals among friends, to accompany a lamb shank with rosemary, for example.

In 1972, Evelyne joins the family company with her husband Christophe to replace her mother, Erica, and continue the family saga started in 1834.
