Champagne Stéphane Herbert - Millésime 2011

Original bottle, dressed in bright and festive colours.

Aspect:

Golden yellow, sparkling.

Very fine bubbles.

Delicate bead of bubbles, persistent after service of the Champagne.

Nose:

Harmonious and intense, source of rare feelings.

Radiant scents of apple, pear, citrus fruits, hazelnut and grape, coupled with elegant scents of white flowers, supported by a life-giving breath, iodized and mentholated, signatures of the Chardonnay, exclusive varietal of the Champagne.

Later, the cuvée unveils its generous maturity with its scents of brioche, barely roasted, result of 3 years of ageing on laths of the bottles before disgorgement.

Palate:

Lively and dense opening, obtained by the timely stop of the malolactic fermentation of the base wines, highlighted by the vibrant minerality of the plot “Les Beaux Regards” (25 ares) in the Premier Cru of Rilly-la-Montagne, exclusive origin of the grapes.

The mouth becomes sensual, deep and balanced, thanks to the adjusted dosage with 6 g/L of sugar added at disgorgement, supported by a silky effervescence.

Warm finish, barely spicy, highlighted by harmonious woody notes due to the vinification and ageing of wines in 3 to 5 years old oak barrels.

Great length on the palate.

With this Millésime 2011, Stéphane Herbert, wine grower, was able to harvest by hand his grapes at perfect ripeness and vinify them without chaptalization (added sugar) to offer us a blanc de blancs with a touching sensuality.

To taste from aperitif to meal, with a crayfish pie, for example.

Wine grower in Rilly-la-Montagne, in the heart of the Mountain of Reims, since 1996, the Champagne House Stéphane Herbert cultivates with care its vineyard of 4.5 hectares, composed of the three champenois varietals (50% Chardonnay, 38% Meunier and 12% Pinot Noir), of which 3.11 hectares planted in the Premier Cru of Rilly-la-Montagne. An accurate and inspired oenology gives birth to around 30,000 bottles of great quality Champagnes per year.
