Radiant, generous and sensual.
Well defined maturity, signature of the patient ageing on laths of the bottles (10 years) before disgorgement, with joyful aromas of honey and caramel coupled with captivating spirituous notes, evolving towards roasted coffee.
Later, the Chardonnay, exclusive varietal of the Champagne, carefully selected in 2004 at perfect ripeness in old plots of vine, is slowly revealed with its heady scents of citrus fruits, apple, pear and candied quince.
Dense and balanced at the opening, supported by a radiant maturity, reinforced by the rigorous selection of the first juices (cuvée), purer, during the pressing of the grapes, and by the adjusted dosage with only 4 g/L of sugar added at disgorgement.
The mouth becomes caress, silky and sensual, definitely the result of the vinification (without chaptalization) and then the ageing of the base wines in oak barrels (3 to 8 years old), for eight months, with regular bâtonnages.
Exceptional length on the palate.
Dominique Person put all his sensitivity of wine grower in the service of this cuvée l’Audacieuse Millésime 2004, to interpret with talent the radiant energy of the terroir heart of the Premier Cru of Vertus.
To taste from aperitif to meal, to accompany a sea bass slightly smoked with caviar, for example.
Fourth generation of wine growers settled in Vertus, Dominique Person first wine maker of the Champagne House Person perpetuates the family tradition since 1999. The Clos des Belvals bought in 2006 strengthens a vineyard of more than 15 hectares, spread over the Premiers and Grands Crus of the Côte des Blancs, cultivated with passion according to the biodynamy principles, to produce with precision highly expressive Champagnes, inspired revelations of the noble terroirs.
