Original and luxurious bottle, with cork held by a hemp string.
Reserved bead of bubbles.
Radiant, it proposes an endless perfumed harmony.
The aromas of apple, pear, apricot and hazelnut, signatures of the majority of Chardonnay (55%) interlace the scents of candied red and black fruits, punctuated by reserved spices, expressions of the Pinot Noir (35%) and Meunier (10%).
Later, the generous maturity reveals its warm hints of honey, result of 7 years of ageing on laths of the bottles before disgorgement.
Pure attack obtained by the rigorous selection of the very first juices (tête de cuvée) during the pressing of the grapes, by the timely stop of the malolactic fermentation of the base wines and by the adjusted dosage with only 3 g/L of sugar added at disgorgement.
The mouth becomes caressing, with subtle woody notes, thanks to the vinification and ageing of the base wines in Burgundian oak barrels aged of 1 to 10 years, with regular bâtonnages from October to February.
Tasty finish, supported by a vibrant minerality of the old vines from the Premiers Crus of Ludes (50%) and Taissy (50%).
Great length on the palate.
For this Cuvée Bertille 2007 created in honour of his daughter, Luc Gaidoz was able to select his best grape juices at tasting, to vinify them carefully, without racking, nor filtration, nor fining, to offer a rare Champagne, inspired interpretation of the original champenois traditions.
To taste during festive meals, to accompany a fine stuffed quail pie, for example.
Established in Ludes, in the heart of the Mountain of Reims, the Champagne House Gaidoz Forget has been trying hard to perpetuate the family tradition through more than 6 generations. An uncompromising demand in the service of a vineyard of 9 hectares allows to produce and market around 80 000 bottles of Champagnes with personality per year, under the brand created in the early 1960s.
