Champagne Diogène Tissier et Fils - Cuvée Vintage Millésime 2008

Guide VERON des Champagnes 2017

(around 21 euros per bottle)

Generous shape, for a sober and luxurious bottle.

Aspect:

Golden and brilliant.

Bubbles of great finesse.

Fine bead of bubbles.

Nose:

Endless harmony of scents, source of intense emotions.

Great maturity, result of 6 years of ageing on laths of the bottles before disgorgement, with its scents of pastries evolving towards roasted coffee, enhanced by subtle woody notes obtained by the vinification and the ageing of 20% of the base wines in 2 to 4 years old barrels, for 5 months, with regular bâtonnages.

The Chardonnay (52%) is then slowly unveiled, with delicate hints of white fruits, almond ans hazelnut, supported by a iodized and mentholated breath, interlacing joyful aromas of candied red fruits, signatures of the Meunier (31%) and the Pinot Noir (17%).

Palate:

Pure opening, definitely thanks to the selection of the first juices (cuvée), during the pressing of the grapes.

The mouth is then revealed deep and warm, result of the judicious fulfillment of the malolactic fermentation of the base wines.

Tasty finish, dense and mineral, punctuated by delicious spices.

Great length on the palate.

With this Cuvée Vintage Millésime 2008, Vincent Huber, its producer, was able to select his best plots, in the terroirs of Chavot-Courcourt, Barbonne-Fayel and La Celle-sous-Chantemerle, to extract the quintessence of the year 2008.

To taste from aperitif to meal, with a fatted chicken from Champagne with boletus mushrooms, for example.

Founded by Diogène Tissier in 1931, the Champagne House Diogène Tissier et Fils perpetuates the champenois traditions, between expertise and friendliness. A vineyard of 9 hectares cultivated with passion, mainly settled on the sunny hillsides of Chavot-Courcourt, south of Epernay, and a mindful vinification of the three champenois varietals (Chardonnay, Pinot Noir and Meunier) harvested by hand at perfect ripeness, allow to produce around 100,000 bottles of quality Champagnes per year.
