Elegant corolla of bubbles.
Initially impenetrable and touching, it slowly unveils its delicious complexity.
Aromas of citrus fruits, apple and pear, coupled with delicate scents of almond, hazelnut and white flowers supported by a mentholated breath, signatures of the Chardonnay (60%) and the Pinot Blanc (40%) harvested nice ripe in 2012, in the plot “le Champ du clos” (90 ares) south-facing, close to the Abbaye des Mores, near Celles-sur-Ource.
Lively opening, thanks to the selection of the first juices (cuvée), purer, during the pressing of the grapes, reinforced by an adjusted dosage with only 5 g/L of sugar added at disgorgement.
The mouth is then revealed perfectly balanced, between tasty minerality and caressing warmth, supported by subtle woody notes obtained by the perfect control of the vinification and the ageing of the base wines in 600 litres oak casks for Pinot Blanc wines and in 228 litres oak barrels for 50% of the Chardonnay wines.
Great length on the palate.
With this Blanc de Blancs « Champ du Clos » Extra Brut, Thomas Cheurlin and Philippe Gantois, its producers, were able to implement a gentle and accurate oenology in the service of an ancestral varietal (Pinot Blanc), to offer us a remarkable Champagne.
To taste from aperitif to meal, with a fillet of bass and its potatoes, for example.
Wine grower in Celles-sur-Ource, Thomas Cheurlin has been perpetuating the family traditions for 10 generations. A rigorous selection of the best grapes from his vineyard of 22 hectares, established on the well exposed hillsides of the valley of the Ource, the Arce and the Seine, cultivated with the desire to reduce the environmental footprint (Terra Vitis and Haute Valeur Environnementale certifications), give birth to high quality Champagnes, under the brand Comte de Cheurlin.
