Subtle and heady.
Delicate aromas of citrus fruits, apple, pear and white flowers, evolving towards exotic fruits touches (pineapple, mango and litchi), enhanced by a iodized and mentholated breath, signatures of the Chardonnay, exclusive varietal of the cuvée, harvested by hand in 2009 in the chalky Premiers Crus terroirs of Bisseuil in the Mountain of Reims and Grauves in the Côte des Blancs.
Later, the well-defined maturity of the Champagne, result of 6 years of ageing on laths of the bottles before disgorgement, is revealed with generous scents of honey, pastries and roasted coffee.
Dense and pure attack, definitely due to the selection of the first juices (cuvée) during the pressing of the grapes and to the adjusted dosage with only 6 g/L of sugar added at disgorgement.
The mouth then becomes gentle and creamy thanks to the judicious fulfillment of the malolactic fermentation of the base wines, highlighted by a delicious minerality.
Tasty and acidulous finish.
Very great length on the palate.
With this Cuvée Saint Nicaise – Premier Cru – Blanc de Blancs millésime 2009, Bruno Charlemagne, Oenologist and cellar master of the Champagne House Bauchet, offers us a remarkable interpretation of the Chardonnay.
To taste from aperitif to meals among friends, with a tuna tartar and oysters, for example.
Artisan wine growers from fathers to sons since 1920, the Champagne House Bauchet tries its hardest to interpret with sensitivity, in Bisseuil, the 7 terroirs of its vineyard of 34 hectares settled in the Côte des Blancs, Mountain of Reims and Côte des Bar. Now directed by Bruno Bauchet and his cousin Florence, the House accurately produces around 250,000 bottles of authentic Champagnes each year, marketed in France, but also more and more abroad.
