Mythical Champagne

The Chardonnay,
exclusive varietal, gently establishes itself with its aromas of apple, pear
and citrus fruits, enhanced by a life-giving breath, iodized and mentholated.
Later, the cuvée reveals its fullness with sensuals
scents of gingerbread and pastries, thanks to 9 years of ageing on laths.
Palate:
Lively opening, obtained
by the selection of the first juices (cuvée),
purer, during the pressing of the grapes from very old vines (over 60 years
old).
Deep and sensual caress,
highlighted by subtle woody notes, characteristic sign of the vinification and
the ageing of the base wines for 7 months in old barrels, without racking, nor
adding sulphur, nor filtration.
Pure finish, reinforced
by the adjusted dosage with only 3 g/L of sugar added during the recent
disgorgement.
Fabulous length on the
palate.
With this reserved cuvée Clos Faubourg Notre Dame 2006 -
Extra Brut - Premier Cru, Emmanuel Fourny, wine grower œnologist, offers us an
inspired interpretation of the unique 0.29 hectare terroir of rendzina (on chalk) with the particular microclimate of
the Clos Faubourg Notre Dame, exclusive property of the family since 1930.
Ideal to accompany the
meal among friends, with a sweetbread and prawns, for example.
Established in Vertus
since 1856, the Champagne House Veuve Fourny et Fils has been perpetuating the
style of the House, true to its motto: a family, a Clos, a Premier Cru. Being
certified Haute Valeur Environnementale (HVE), Charles-Henry and Emmanuel,
visionary wine growers, fifth generation and sons of Mrs Veuve Fourny, work with
passion, since 1995, 20 hectares of old vines in Vertus. A parcelled
vinification, in small volumes, of which a third in oak barrels, gives birth to
around 250,000 bottles per year of exceptional Champagnes.
