Guide VERON des Champagnes 2018

Evocative name. Original and sober bottle.
Aspect:
Golden and brilliant.
Refined and festives bubbles.
Fine bead of foam, persistent.
Nose:
Generous and heady aromatic farandole.
Fragrances of red and black fruits (strawberry, raspberry,
blueberry, blackcurrant and blackberry), subtly iodized, touching signatures of
the Meunier, exclusive varietal of the Champagne.
Later, radiant scents of honey and caramel, barely roasted,
reveal the maturity of the cuvée
obtained by 4 years of patient ageing on laths of the bottles, before riddling
and disgorgement.
Palate:
Pure and deep opening, obtained by the timely stop of the
malolactic fermentation of the base wines, enhanced by the joyful minerality,
the one of the soil of the meander of Passy, original terroir of the House.
Later, the mouth becomes caressing, ample and warm,
delicately spicy, definitely thanks to the ageing of the reserve wines from
2011 in oak barrels.
Tasty finish, supported by the soft and creamy effervescence.
Endless length on the palate.
For this cuvée
Meunier d’Antan, Pascal Serveaux and his son Nicolas were able to accompany
with talent the Meunier grapes, harvested by hand in 2011 (30%) and 2012 (70%)
in old plots of vine (40 years old in average), to offer us a sensual
interpretation of the Meunier, historical DNA of the Champagne House Serveaux
Fils.
To taste from aperitif to meal, to accompany a blanquette of
veal with boletus mushrooms, for example.
Established in Passy-sur-Marne, in the heart of the Marne
Valley, the Champagne House Serveaux Fils cultivates with love its vineyard of
15 hectares, composed of 60% of Meunier, 20% of Pinot Noir and 20% of
Chardonnay. Driven by a real desire to reduce the environmental footprint,
being certified Haute Valeur Environnementale and sustainable viticulture of
Champagne, it produces each year around 50,000 bottles of highly expressive
Champagnes, variations inspired around the Meunier divided into three
collections: Ancestrale, Terroir and
Vintage.
