Aspect:
Brilliant.
Very fine bubbles.
Refined bead of bubbles.
Nose:
Sensual and endless
breath.
The aromas of candied
red and black fruits, signatures of the majority of black varietals (35% Pinot
Noir and 28% Meunier) embrace the delicate touches of white flowers, citrus
fruits, apple and pear, characteristic sign of the Chardonnay (37%).
Later, the nose becomes
caressing, with generous notes of pastries and roasted coffee, expressions of
the joyful maturity obtained by 6 years of patient ageing of the bottles before
disgorgement.
Palate:
Straight opening,
definitely obtained by the selection of the juices from the first pressing (tête de cuvée) during the pressing of
the grapes, but also by the timely stop of the malolactic fermentation of the
base wines.
The vertiginous
minerality gives way to a sensual gentleness, with subtle woody notes thanks to
the vinification and to the ageing of the base wines in oak barrels which are
from 1 to 10 years old, with bâtonnages.
Fresh finish, barely
spicy.
Endless length on the
palate.
Luc Gaidoz was able to
accompany with sensitivity and accuracy grapes chosen in his plots of old
vines, without racking, nor filtration, nor clarification, as it was before, to
compose in honour of his daughter Bertille this eponymous cuvée, inspired interpretation of the beautiful year 2009.
To taste during gourmet
meals, with a milk-fed veal and roasted sesame, for example.
Independent wine grower
settled in Ludes, in the Mountain of Reims, the Champagne House Gaidoz Forget,
now directed by Anne and Luc Gaidoz, assisted by their daughter Bertille, has
been perpetuating the champenois
expertise for more than 4 generations. Certified Haute Valeur Environnementale,
it cultivates with passion its vineyard of 10 hectares planted with the 3 champenois varietals (Pinot Noir,
Meunier and Chardonnay), to produce with talent around 80,000 bottles per year
of authentic Champagnes.
