Champagne Fleury - Sonate 2011 Extra Brut

Organic Champagne

Sober and bright presentation in an original opaque bottle, absolute protection against lightstrike.

Aspect:

Golden.

Delicate bubbles.

Fine bead of foam.

Nose:

Endless farandole of heady aromas.

The Pinot Noir (60%) with its fragrances of red and black fruits, barely spicy, gently interlaces the Chardonnay (40%) and its delicious scents of white fruits, peach and citrus fruits, deliciously mentholated.

Later, the fullness of the Champagne is unveiled, result of 5 years of ageing of the bottles before disgorgement, with its touches of honey and brioche coupled with reserved woody notes obtained by the vinification of 45% of the base wines in oak barrels.


Palate:

Pure at the opening, highlighted by a delicious tension thanks to the absence of dosage (no sugar added at disgorgement).

The mouth becomes a silky caress, supported by the minerality of the soils of the plots selected in Courteron (Côte de Champraux and Charme de Fin), in which vines deeply take root.

Fresh and dense finish, perhaps the characteristic sign of the yeast strain selected by the House in 2006.

Remarkable length on the palate.

For this reserved Sonate 2011 Extra Brut (12,000 bottles), Jean-Sébastien Fleury was able to accompany with sensitivity, without adding sulphur, grapes harvested by hand in 2011, to reveal its vital force.

Ideal as an aperitif, with goat’s cheese on bread and pink peppercorns, for example.

Under the leadership of Jean-Sébastien, Morgane and Benoît Fleury, creative fourth generation, the Champagne House Fleury has been perpetuating the family traditions. The implementation of the biodynamy principles, in the 15 hectares vineyard since 1989, and now during the production taking into account the waning moon periods and fruits days for the key stages (racking, bottling and disgorgement), gives birth each year to around 200,000 bottles of a range of natural Champagnes.
