Aspect:
Golden, intense.

finesse.
Nose:
Radiant waltz of sensual
aromas.
The Meunier, exclusive
varietal of the Champagne, carefully selected in 2010, is immediately revealed,
heady, with its fragrances of red and black fruits punctuated by touches of
spices, and highlighted by a mentholated breath.
The maturity is then
revealed with its warm notes of caramel and cocoa, subtly roasted, results of 5
years of patient ageing of the bottles before disgorgement.
Palate:
Pure attack, obtained by
the selection of the best juices at pressing of grapes (tête de cuvée), reinforced by the timely stop of the malolactic
fermentation of the base wines.
The mouth becomes
caressing, between reserved power and elegance, thanks to the generous dosage,
with 10 g/L of sugar added at disgorgement, enhanced by the mineral tension of
the chalky terroir of
Fleury-la-Rivière and by the subtle and creamy effervescence obtained by a
light prise de mousse (4.5 bars
instead of 6).
Deliciously acidulous
finish.
Endless length on the
palate.
With this cuvée EGREG’OR Brut 2010 and its poetic
name, mysterious reference to Latin « Egregius
» which means « stood out, exceptional », used by Victor Hugo in La légende
des siècles in 1859, Jérôme Niziolek-Demière, artisan wine grower, offers
us a remarkable Champagne, but especially a high level wine.
To taste during meals among
friends, with a turbot, for example.
Founded in 1936 in
Fleury-la-Rivière, the Champagne House A et J Demière has been perpetuating the
family tradition of love for Champagne. Since 1998, in a continuing effort to
reduce the environmental footprint, Audrey and Jérôme, third generation,
cultivate their vineyard of 8 hectares to compose with talent, in their new
facilities, around 70,000 bottles per year of a range inspired by highly
expressive Champagnes.
