Mythical Champagne

Sober, luxurious and original bottle.

Aspect:

Golden and bright.

Refined bubbles.

Fine bead of foam, persistent after service of the flute.

Nose:

Perfumed, heady and endless universe.

Aromas of apple, nice ripe pear and citrus fruits gently interlace delicate touches of grape and exotic fruits (apricot, pineapple and mango) to enhance the Chardonnay, exclusive varietal of the cuvée highlighted by an iodized and mentholated life-giving breath.

Later, the generous scents of honey and caramel subtly mingle with notes of marzipan, barely roasted, to express the well-defined maturity, obtained by 11 years of ageing on laths of the bottles, with patient autolysis of the prise de mousse yeasts.

Palate:

Joyful liveliness and tension at the opening, thanks to the perfect control of the malolactic fermentation deliberately blocked on a part of the base wines, underlined by the touching chalky minerality.

The mouth becomes a sensual caress, deep and creamy, delicately driven by the silky effervescence, reinforced by the adjusted dosage.

Deliciously acidulous finish, punctuated by soft spices (white pepper and cinnamon).

Very great length on the palate.

For this cuvée Orpale 2004 Grand Cru, Cédric Jacopin, œnology and quality director of the Champagne House de Saint Gall, convokes with talent the Grands Crus of the Côte des Blancs (Cramant, Oger and Le Mesnil-sur-Oger), to offer us a touching and graceful Champagne.

To taste from aperitif to festive meals, with a sole fillet and Champagne sauce, for example.
