Champagne De Sousa - Cuvée des Caudalies Grand Cru Millésime 2010 Extra Brut

Aspect:

Golden, brilliant.

Refined bubbles.

Creamy tears.

Nose:

Captivating aromatic harmony, ceaselessly being renewed.

Radiant aromas of honey and then of roasted coffee, characteristic signs of the fullness of the cuvée obtained by over 6 years of ageing on laths of the bottles, with two « poignettages » (in order to keep yeasts suspended), before riddling and disgorgement.

Later, the bouquet lights up with notes of white fruits and exotic fruits enhanced by the vinification made by the indigenous yeasts (yeasts from the terroir), signatures of the Chardonnay harvested at perfect ripeness on very old plots of vine (over 65 years old) of the Grands Crus of the Côte des Blancs.

Palate:

Vertiginous purity, obtained by the selection of the best juices during the pressing and by the minimalist dosage with only 4 g/L of sugar added at disgorgement.

The mouth becomes caressing, ample and warm, perhaps thanks to the vinification and the ageing in barrels for 10 months, with bâtonnages.

Tasty finish, punctuated by spices and highlighted by the minerality of the chalk.

Endless length on the palate.

With this Cuvée des Caudalies Millésime 2010 produced without filtration, Erick De Sousa was able to tame the particular alchemy of this great year 2010 to offer us a tremendous champagne.

To taste during gourmet meals, with a farm-fresh poultry, oyster mushrooms and sweet potatoes, for example.
Resolutely committed to an ecological approach, certified Viticulture Biologique since 2010 and Demeter (biodynamy) since 2013, Erick De Sousa tries its hardest to enhance the terroirs of Champagne. While the third generation brings its dynamism with the arrival of Charlotte, Julie and Valentin in the wine estate, a gentle and controlled œnology reveals the outstanding soul of the grapes carefully harvested by hand in the old plots of the vineyard of which soils are ploughed.
