Grass cover of the plots: even if the wine growers are more
and more incited to cover their lands with grass, the chemical weeding, with
the resulting pollution hazards, still remain a current practise in the
Champagne vineyard. The wine grower who
chooses to cover his vineyard with grass enables a better expression of the
terroir in his champagnes. Indeed, with this environment friendly technique, he
decreases the yields and forces the roots to go deeper in the ground.
