(around 72 euros per bottle)
Sober and harmonious presentation.
White gold, crystal-clear.
Fine and dynamic bubbles.
Fine bead of foam.
Outstanding and endless perfumed round.
Sensual aromas of apple and pear compote, citrus fruits and white flowers, hymns to the Chardonnay, exclusive varietal, highlighted by an iodized and mentholated breath.
Later, the radiant maturity reveals scents of pastries and roasted coffee, subtly spicy, result of 10 years of ageing of the champagne.
Vertiginous purity at the opening, underlined by the adjusted dosage with 5 g/L of sugar added at disgorgement and enhanced by the magnificent minerality of the chalk of the Grand Cru of Oger, in the Côte des Blancs.
The mouth becomes caressing and gourmet, characteristic sign of the old plots of vine (60 years old) and of the exceptional maturity of the grapes protected by the walls of Le Clos Cazals.
Balanced finish, punctuated by spices thanks to the passage in barrels of 10% of the base wines.
Great length on the palate.
For this cuvée Le Clos Cazals 2008 Extra Brut, Delphine Cazals offers us a remarkable interpretation of the exceptional terroir of Le Clos Cazals acquired by her grandfather, Olivier Cazals, in the 1950’s, and signs a new unforgettable opus of this cuvée created in 1995.
