Mythical champagne
Neat presentation and poetic name, comparing the œnological ladscapes to
the spectacular ones of the mythical mountain passes.
Aspect:
Solar.
Very
fine bubbles.
Delicate
bead of bubbles.
Nose:
Vertiginous
aromatic overview, reinforced by the long period between disgorgement and
shipment.
Remarkable
complexity, between aromas of nice ripe red and black fruits of the black
varietals (45% of Meunier and 40% of Pinot Noir) and scents of white fruits,
peach and citrus fruits, delicately mentholated, of the Chardonnay (15%).
Patience
is rewarded by the revelation of touches of honey and cocoa, with subtle woody
notes, obtained by the 5 years of ageing of the bottles.
Palate:
Balance
between delicious vitality, underlined by the extra brut dosage, and reserved
power, highlighted by the subtle effervescence thanks to a pressure reduced
after the prise de mousse.
We
find again the woody notes thanks to the ageing in wood of the reserve wines
(85%) for 10 months, in Burgundian wood and in oak casks from the Argonne
forest.
Rare
length on the palate.
For this édition
C.C.F 2067 (col de la Croix de Fer at an altitude of 2067 m) from the new range
Hors Catégorie, Elisabeth Sarcelet, cellar master of the Champagne house
Castelnau, was able to blend the best wines (15% from 2011 and 85% from 2010)
from selected terroirs, between
Trépail, Villers-Marmery, Montgueux, Les Riceys and the Vitryat.
To taste from aperitif to meal, with a duckling and foie gras, for example.
Resolutely forward-looking, around 760 wine growers, united and
passionate, put their expertise in the service of their 900 hectares vineyard
planted in 149 of the best Crus of Champagne. A team of audacious oenologists,
around Elisabeth Sarcelet, creative cellar master, accompanies grapes harvested
by hand at perfect ripeness and pressed with gentleness, to craft each year
around 800,000 bottles of great wines from Champagne, ripened for a long time
in the cellars of the Champagne house Castelnau founded in 1916.
