Bright presentation.

Aspect:

Golden.

Refined bubbles.

Delicate bead of bubbles.

Nose:

Heady complexity.

Joyful maturity with notes of caramel and pastries, deliciously roasted, characteristic sign of the 5 years of ageing on laths of the bottles, before manual riddling and disgorgement.

Later, the Chardonnay, exclusive varietal, is gently unveiled with elegant scents of candied citrus fruits, apple, pear and white flowers, driven by an iodized breath.

Palate:

Vertiginous tension of the chalk of the old plots (more than 50 years old) from Avize (« Le Champ Bouton ») and Cramant (« Les Bionnes »), enhanced by the selection of the very first juices (tête de cuvée) during the pressing of the grapes.

Later, the champagne becomes caressing, reinforced by the fulfilment of the malolactic fermentation of the base wines, part of which is vinified in demi-muids, highlighted by the adjusted dosage with 3 g/L of sugar added at disgorgement.

Lively finish, coupled with an outstanding salinity.

Impressive length on the palate.

With this Champagne Extra Brut 2012 Blanc de Blancs Grand Cru - Minéral collection, Pascal Agrapart and his son Ambroise were able to reveal with accuracy the minerality of its nobles origins and sign a great champagne.

To taste as an aperitif or during a meal, with a grilled cod-fish loin, in potato crust, for example.

In Avize, Pascal Agrapart and his wife Nathalie were able to convey their passion for Chardonnay and Grands Crus of the Côte des Blancs (Avize, Oger, Cramant and Oiry), inherited from 3 generations of wine growers, to their son Ambroise, œnologist, who joined the wine estate. The 50 plots of old vines of the 12 hectares vineyard are ploughed with care and enriched with a homemade compost to better respect the life of the soil, and then vinified separately, gently, with indigenous yeasts, without filtration nor clarification, to let burst out the force of the terroirs.
