The
Chardonnay, exclusive varietal, selected with care in 13 plots from Grands
Crus of the Côte des Blancs, in Oger and Le Mesnil-sur-Oger (50%) and 5 plots
from the terroirs of Montgueux (50%)
in the Côte des Bar, offers its scents of citrus fruits, apple and pear
compote, highlighted by delicate touches of iodine and mint.
Later,
the maturity establishes itself, result of 3 years of slow autolysis of
the prise de mousse yeasts, in
bottles, with warm aromas of honey and pastries, barely roasted.
Palate:
Dense
opening, obtained by the rigorous selection of the best juices during the soft
pressing of the grapes harvested by hand in 2014 (60%) and in 2013 (40%),
reinforced by the absence of dosage (no sugar added at disgorgement).
The
mouth becomes a generous gentleness, driven by the tension and minerality of
the chalk from the Cretaceous.
Beautiful
vitality at the end, punctuated by spices.
Endless
length on the palate.
With this Blanc de Blancs Extra-Brut 3210, Pierre Gonet signs a radiant interpretation of the Chardonnay of noble origins.
To
taste from aperitif to meal, with a seafood plate and almonds, for
example.
At
22 years old for Chantal, after bright studies at Polytechnic Feminine University,
and 23 years old for her brother Pierre, graduated in viticulture and œnology
in Beaune, they had to continue the work of the their father Philippe,
deceased, to perpetuate the quest for excellence supported by 6 generations of
wine growers. An exceptional vineyard of 19 hectares with
4.5 hectares in Le Mesnil-sur-Oger (mythical Grand Cru of the Côte des
Blancs), of which each of the 45 plots is vinified separately, gives birth
each year to around 210,000 bottles of exceptional champagnes.
