Aspect:
Gold,

Nose:
Heady
and endless aromatic whirl.
Seductive
notes of almond and pastries, and then of delicately roasted cocoa,
characteristic signs of the patient ageing of the base wines, of which 35% of
reserve wines.
Later,
aromas of apple, pear, citrus fruits and white flowers, refined signatures of
the Chardonnay (40%), gently combines with fragrances of red and black fruits
underlined by spices, generous expressions of the Pinot Noir (60%).
Palate:
Resolutely lively opening, highlighted by the bright minerality of the
chalk of the Grands Crus of the great Mountain of Reims.
Remarkable structure, warm, reinforced by the judicious fulfilment of
the malolactic fermentation of the base wines and by the 8 g/L of sugar
added during the dosage.
Deliciously bitter finish, punctuated by soft spices and supported by
the creamy effervescence.
Great length on the palate.
For this Brut Sélection,
Jean Lallement, wine grower, was able to blend with talent the base wines from
selected plots, vinified separately, to sign a touching champagne, with a
confident personality, revelation of the generosity of the Grands Crus of Verzy
and Sillery.
To taste from aperitif to meal, with a guinea fowl with walnut crust and
chicory, for example.
Established in Verzy, in the heart of the Mountain of Reims, the
Champagne house Juillet-Lallement, first collective brand of Champagne
registered at the CIVC in 1931, cultivates its 4 hectares vineyard spread
over the Grands Crus of Verzy and Sillery, in the greatest respect of the
environment. Son and heir to 3 generations of wine growers, but especially to
passionate producers of champagnes, Jean Lallement, assisted by his wife Virginie,
has been perpetuating the values of the house since 2003, producing with
accuracy inspired cuvées, divided
into two collections: « Juillet-Lallement » and « Belle de
Juillet ».
