Aspect:

Gold, brilliant.

Fine bubbles.

Fine bead of foam and splendid tears.

Nose:

Heady generosity.

Vibrant minerality at the first nose, touching characteristic sign of the chalk of the plots (over 80 years old) from the locality « Les hauts Nemery » in the Grand Cru of Avize, in the heart of the Côte des Blancs, into which the roots dive, thanks to a controlled ploughing with horse to aerate the soil without packing it.

Later, the sensual maturity, result of 3 years of ageing of the bottles on laths, transcends the Chardonnay, exclusive varietal, with scents of citrus fruits, apple, pear and white flowers.

Palate:

Vertiginous vital force, underlined by the light dosage with only 4 g/L of sugar added at disgorgement.

The outstanding tension gives way to a creamy roundness, supported by the vinification and then the ageing in oak barrels with regular bâtonnages.

Tasty finish, punctuated by soft spices.

Exceptional length on the palate.

A natural viticulture, a gentle and accurate vinification by the indigenous yeasts, in a fermenting room balanced by the message of a quartz, allow Erick De Sousa to offer us a generous cuvée Mycorhize, with an elegant and bright texture.

Ideal to accompany your gastronomic meals, with sea bream fillets and spices, for example.

While the Champagne house De Sousa is preparing to celebrate in 2020 its 20 years of commitment to biodynamy and its 10 years of Organic Viticulture certification, the entire family is now working with the involvement of Charlotte, Julie and Valentin, third generation in the wine estate, alongside Erick De Sousa and his wife. Driven by the desire to enhance the terroirs enabling the vines roots of the 42 old plots of the 9.5 hectares vineyard to root deeply in the ploughed soils, Erick De Sousa composes with sensitivity touching champagnes.
