Aspect:
Beautiful
copper colour, bright.
Fine bubbles.
Generous
tears, promise of fullness.
Nose:
Sensual,
it slowly unveils its endless aromatic universe.
Joyful
fragrances of red and black fruits (strawberry, raspberry, blackcurrant and
blackberry), kirsch and liquorice, outstanding signatures of the majority of
Pinot Noir (80%), highlighted by delicate touches of apple, pear, candied
citrus fruits and mint, revelations of the Chardonnay (20%).
Later,
the champagne reveals its captivating maturity with sumptuous scents of honey,
cocoa and roasted coffee, obtained by 8 long years of ageing on laths.
Palate:
The
deliciously mineral vitality of the opening, reinforced by the timely stop of
the malolactic fermentation of the base wines, slowly gives way to a fabulous
roundness, ample and creamy, definitely the characteristic sign of the perfect
control of the maceration of the grapes during the vinification, supported by
the dosage with 7 g/L of sugar added at disgorgement.
Lively
finish, supported by a life-giving breath and coupled with a remarkable
presence.
Rare
length on the palate.
Frédéric
Roger, cellar master of the Champagne house Cristian Senez, orchestrated with
daring the intimate union of Pinot Noir and Chardonnay to sign a radiant Rosé
de Saignée 2008, brilliant delicacy.
Ideal
from aperitif to meal, with autumnal sushi and fig leaves, for example.
Driven
by the same passion for Champagne, the generations follow one another to
perpetuate the family expertise and cultivate the Pinot Noir, Pinot Blanc,
Meunier and Chardonnay from the 21 hectares vineyard established in the
well-exposed slopes of the Côte des Bar. Nowadays Marion Roger is joining her
parents Angélique and Frédéric, to continue the endless quest for excellence,
started by her maternal grandfather, Cristian Senez, with the creation of the
eponymous brand in 1973.
