brilliant white wire.
Aspect:
Gold,
brilliant.
Fine
and tonic bubbles.

Nose:
Magnificent
aromatic whirl.
The
luxuriant fragrances of red and black fruits, highlighted by delicate touches
of spices, illustrate the full extent of the Pinot Noir (50%) chosen in
Passy-Grigny and Meunier (50%) selected in Fleury-la-Rivière.
Later,
the nose reveals heady scents of exotic fruits (mango, kiwi and citrus fruits),
definitely the result of the perfect control of the temperature during the alcoholic
fermentation of the base wines.
Palate:
Incredible
vitality at the opening, characteristic sign of grapes harvested by hand in
2016 in old plots of vine (45 years old), supported by the timely stop of the
malolactic fermentation of part of the Meunier base wines.
The
mouth becomes caressing, driven by a gentle minerality.
Balanced
finish thanks to the absence of dosage (no sugar added at disgorgement).
Great
length on the palate.
With
this cuvée Blanc de Noirs -
Extra Brut - Insolent, Vanessa Maumy and
Xavier Petit revisit the noble terroirs
of the Marne Valley to affirm with daring the By Fernand style.
To taste from aperitif to meal, with a milk-fed veal simmered on walnut
shells, for example.
Driven by the desire to produce touching
champagnes, both authentic and festive, with a spark of imagination, Vanessa
Maumy and Xavier Petit cultivate with passion their 6.5 hectares vineyard in
the greatest respect of the environment. The best grapes of the 10 Crus of the
wine estate are carefully harvested by hand, between Côte des Blancs and Marne
Valley, and then meticulously vinified to craft with sensitivity and conviction
the singular universe of the brand By Fernand, created in 2013 in homage to Vanessa’s
grandfather.
